Quick and Healthy: Steak Peppers & Onion w/Mashed Sweet Potato

In this week's Quick and Healthy prep is an extremely tasty favorite... Steak, peppers, and onion, with sweet potato. This hearty meal is packed with protein, vitamin C and vitamin B this is the absolute perfect energizing meal for the busy healthy meat eater.
Thin cut sirloin steak
1 medium red, yellow and orange pepper (chopped)
1/1 red onion (chopped)
1 medium/large sweet potato (boiled)
Weber's Citrus Herb Seasoning
Preparation: To prepare this great meal start by by boiling your potato(s) until very soft using a fork to test. While boiling chop your veggies and slice your steak into checker board squares. Since the steaks are thin cut I usually stack each steak on top of the other and slice them at once with no concerns. Once your steak is prepped, heat your favorite healthy oil or spray and add your steak stir frying and turning frequently on high heat. Once your steak is approximately 1/2 cooked to your liking add seasoning and your veggies, continuing to turn frequently until your steak is cooked to your desired rareness. Veggies should still be slightly crispy and perfectly tender.
As boiled potatoes peel the easiest., simply cut off either end of your potato and slice the skin down the middle and it should be very easy to remove, if your potato is boiled soft. Once peeled, mash your potato in a bowl to your desired consistency and serve with your steak, peppers and onions. That's it!!!
The combined flavors are incredible and aside from the time it takes for your potato to boil, this meal is fairly quick and extremely easy to make. If you're a meat eater and you're looking for something easy, hearty and healthy for this week's prep, this is it!
