Quick and Healthy: Chicken Breast, Broccoli, Mushroom Stir Fry

In this week's Quick and Healthy prep is extremely quick and extra healthy favorite... Chopped Chicken Breast, Broccoli and Mushroom stir fry with white rice. This super yummy meal is packed with protein and vitamin K, and with the perfect balance of carbs, it's an energizing stabilizing meal that you can honestly eat any time of the day... Breakfast included!
2 - 4 small to medium chicken breast
2 - 3 Cups of fresh broccoli crowns
1-2 Cups of sliced mushroom
Preparation: Prepare and cook rice in cooker or stove top. Chop chicken breast into bite sized cubes. Wash and prepare vegetables. Heat favorite healthy oil or spray in medium stainless pan or wok. Partially cook chicken breast turning frequently. Add salt and pepper to taste. Add broccoli early for soft, more cooked crowns or once chicken is nearly cooked for crisper crowns. Add mushrooms once chicken is nearly cooked stirring frequently until chicken is completely cooked. That's it! Serve and store.
Serving: 3/4 - 1 cup with 1/2 - 1 cup of rice. Prep time: 15 minutes tops Makes: 2 - 4 Meals Cost: <$10
